Elena grew up where fish is bought at dawn and judged by eye. Trained in starred seafood kitchens, with international experience between the Mediterranean and the Atlantic, she holds one firm belief: with fish, there is no improvising. Certain provenance, exact cuts, brief cooking — or none at all.
At home she delivers the complete experience: she chooses the catch and the ingredients from Qualimé partners in the days before, arrives with her own equipment, cooks, serves at the table and leaves the kitchen as she found it. The menu — crudo, a seafood pasta, one dish of bone and fire — takes shape together, guided by the market.
For restaurants she signs guest evenings of the sea: a short, precise menu built with the house brigade, bringing a style of fish cookery that usually requires a journey.
