Luca is a pastry chef who thinks like a cook. Trained between grand pâtisseries and starred kitchens, he brought the rigour of the laboratory to restaurant desserts — and from there into the savoury: leavened breads, plated desserts, petits fours that end a dinner without weighing it down.
