Culatello is born of patience. The noblest part of the leg is trimmed, salted and hand-tied in a natural casing, then left to rest in cellars where humidity and fog do their slow work. No hurry — just salt, time and silence.
The family behind it works with pigs raised gently, reared outdoors and fed without shortcuts. Each piece is followed one by one — the tying, the tapping, the scent that decides when it is ready. The norcino's nose matters more than any clock.
Qualimé guarantees every step of the chain: farming, crafting, ageing. On the board, the slice is deep red and yields softly under the knife, with cellar notes and ripe fruit that linger.
