The traditional method allows no haste: the second fermentation takes place in the bottle, and the lees work in the dark for months. The result is a fine bead and a palate of bread crust, citrus and hazelnut.

The riddling is still done by hand; so is the disgorgement. These are gestures machines imitate but never replicate.

Qualimé certifies the entire chain: from vineyard to riddling rack, every step has a name and a signature.
