In the chestnut woods of the Apennines the forest is dense and the hives stand in the shade. Our partner beekeeper has kept them there for as long as anyone remembers, where the chestnut blooms in early summer and yields a dark, intense nectar with a sharp character.
This is an amber honey that does not try to please everyone: a warm opening, a bitter finish, a long persistence. In the kitchen it holds its own against bold flavours, from aged cheeses to roasted meats.
As with everything Qualimé, the chain is followed step by step: from the woods to the extraction bench, all the way to the jar.
