The red onions are sliced by hand and left to cook for hours over the lowest flame, until they melt into a dark, glossy sweet-and-sour. Small batches, copper pots, no shortcuts.
This is the compote to keep beside the cheese board: it softens the boldest cheeses, sits well with boiled meats, redeems a sandwich. A short, verified supply chain — like everything that carries the Qualimé name.
