The figs reach the kitchen within hours of picking, when the skin just yields under a fingertip. They are cooked slowly, in open pots, in batches of a few dozen jars at a time. No hurry: time is the only thickener.
The recipe is a family one — fruit, little sugar, a touch of lemon. The result is a dense, amber preserve that tastes of ripe fig and late summer.
