The wheels are pierced by hand, one by one, then left to the work of the cave air. The veins open on their own, slowly, where the needle has passed: no shortcuts, only time and the right humidity.
The paste stays creamy, almost molten, and the veining carries a deep flavour that never buries the milk. On the nose, earth and cellar; on the palate, balance.
