The milk arrives raw, still warm from the barn, from a herd that grazes at altitude. The curd is worked by hand, with slow, measured gestures passed down through the family for generations.

Then, the cave. Twelve months at least, in the dark, on wooden boards the cheesemaker turns one by one. The paste dries and concentrates, developing fine crystals that dissolve slowly on the palate: browned butter, hazelnut, a long and precise finish.

Qualimé follows every step, from pasture to the cutting of each piece. That is our guarantee — and it is total.
