The flock heads out at dawn and returns at dusk, as it has in this family for three generations. The milk, drawn in the evening and worked raw the next morning, carries the pasture's herbs with it.

The wheels rest for six months in a stone cellar, brushed and turned by hand. The rind takes on the colour of earth; the paste stays pale, just crumbly, with a flavour that opens gently and closes with resolve — never sharp.
